Sitting at a table in an antique-filled dining room of an austere in one of best fine dining restaurants in south Delhi, I tried to identify a series of objects laid out before me. On one plate sat what looked like a kola coloured thick gravy of some out-of-the-world flesh. It was big and scary but underneath was a pale and juicy white chicken breast piece.
‘When it’s really fresh there is a topping of skimmed milk and it seems to collapse altogether when you put a weight on it.’ Said Hamid, my host.
This was the Chicken Mughlai, He revealed, which was popular with their guests and more delicious when taken with garlic gravy and salad. The large fluffy looking egg-shaped object turned out to be Khameeri roti- which indeed had an intense aroma of its own. And then there was a plate of thick and smoky brown kebabs which craved to be eaten.
It was mid-November and I was sitting at a luscious Dastarkhwan-e-Kareem fine dining restaurant in the elite neighbourhood of Nizamuddin west. The time of dinner could not be better at the peak of this monsoon season. There were around 15-20 other guests in the restaurant. They were certainly belonging to all world cultures and races probably because of the world-famous Nizamuddin Shrine nearby.
As I finished my meal, the head waiter came forward with the bill folder and refreshments. He smiled and put forward the case at my side. It is comprised of sugar-coated fennel seeds and invoice.
‘How did you like some of our best recipes?’ asked Asad, the head waiter.
I gestured back in confirmation. Indeed, this savoury recipe was great in taste and the hospitality of the hosts was even greater. Though, I was aware of the unlike perspective of this upscale eatery but came to realise by myself that it really stands apart from its counterparts in the district and even from other celebrated options. I must say that I really admired that classical affair of fantastic hospitality at the heart of a metropolitan.
